Happy Hump Day <3

What made your hump day happy?

Mine:

  • Pulled pork sandwich with dear friends and their sweet little sweetie-pie.
  • Baby smiles and baby giggles, but most of all, baby hugs and slobbery baby kisses.
  • Waking up to doggy-kisses, albeit stinky ones, but ones none-the-less.
  • Coffee, coffee, coffee. 
  • Lots of walks with friends, babies, and the poochie. 
  • Crisp, cool, but not-too-cool autumn air. 
  • Ready-to-eat single service cookie dough over chatter with a bestie.
  • Perusing through One World Birth.  I <3 Birth.  That has been made clear I think.  I also think being a Doula is in my future.  Some day, some day…
  • Loose Leaf Tea & Drop Dead Diva, in bed on the laptop.
  • Talking to my main-man, who is currently “on the road”.
  • Discovering and following along with the Saskatoon Food Basket Challenge.

    Snuggles with my teething red cheeked bubs in my bed this evening with our dog since hubs is at a work thing.
    Picking up my doggie from a friends who was babysitting as we were on vacation this last week.
    That the weather here is finally losing the humidity.
    Finding a recipe for crock pot pumpkin spice lattes.
    Crockpot Mac and cheese!

    Vacation was amazing!! We went to vancouver and Seattle which for me is like going home, west coast is my chosen home even though I don’t live there anymore, for now. Traveling with bebe was more work but she was a great traveler, like her mama, first night on each coast was the hardest for her due to the time change but the biggest thing was all the luggage we had to bring! I’m used to a backpack and that is it, now it is 2 checked suitcases, 2 carryons, a diaper bag and lunch bag with her feeding supplies plus the stroller and carseat, one of my girlfriends does it with 3 kids, amazing….
    Here is the recipes:
    Pumpkin spice lattes ( I have yet to make so cannot review but they had 20 good reviews on the site)
    1.5-2cups strong coffee
    4 cups of milk
    4 tbsp pumpkin puree
    2.5tsp pumpkin pie spice
    1/4-1/2cup sugar
    3 tbsp vanilla

    Add coffee/espresso to slow cooker
    Whisk in everything else
    Cover and cook on high for 2 hrs
    Whisk before serving,
    Top with whipped cream and you could sprinkle on a bit more of the pie spices.
    Apparently you can also refridgerate and reheat later according to the blog.
    Should yield 4-6servings.

    Mac and cheese

    1/2lb elbow macaroni
    4 cups shredded cheddar (I mixed old cheddar, Colby and havarti)
    1.5 cups milk
    1 can evaporated milk
    2 eggs
    1/2tsp black pepper
    1 large spoonful of Dijon (my personal addition)

    Spray the crockpot with cooking spray
    Mix the eggs with the milks pepper and Dijon, stir in 3 cups of the cheese, and the pasta, dump it all in the slow cooker and top with remaining cheese, cover and cook on low for 5 hrs, I cooked it on high for 2.5hrs and burnt the sides so would probably only cook on high for 2hrs next time.
